Description

This project explores how fresh and freeze-dried cilantro differ in Gas Chromatography- Mass Spectrometry (GC-MS), a method used to identify different molecules in a sample. The cilantro was chopped up and separated into two groups, freeze dried and fresh. Steam distillation was used to extract the oils and other molecules responsible for its flavor and smell. After extraction, GC-MS was used to compare chemical profiles of the two samples.
