Description

Freeze-drying food can keep the food good and able to eat for 25 to 30 years, but will it taste the same? In organic Chemistry I am testing if onions can preserve their taste through running a steam distillation for fresh onions and freeze-dried onions. Based off of the organic molecules found through Gas Chromatography-Mass Spectroscopy. Once I received the results, the molecules that match show if it is present or not in both the freeze-dried onions and fresh onion. Based off the molecules showing in both samples or not, we can make the assumption that the onions keep or lose their flavor when freeze-dried.
