Description

Freeze-drying is the process of removing water from food to extend its shelf life. In this experiment, we used gas chromatography–mass spectrometry (GC-MS) to identify specific chemicals that appeared in our dill sample before and after freeze-drying. By observing these chemicals, we were able to theorize how the flavor profile may have been changed.
