This study examines the impact of metal ions and chelators on oxidation to enhance beer stability. Through controlled trials, we evaluated the effects of 100 mg/L iron and 250 µM glycine on oxidation levels. Our findings provide insights into the role of metal ion interactions in mitigating oxidative degradation, contributing to improved beer shelf life.
