Description
The goal of this experiment was to determine what chemical compounds are found in the Cosmic Crisp apple. To do this, the students used an extraction technique and freeze-dried the apples. A sample was taken prior to being freeze-dried and ran under gas chromatography-mass spectrometry (GCMS). Once the apples had been freeze-dried, they were then rehydrated, and another extraction experiment was done and ran again by GCMS. The results then showed what compounds make up the Cosmic Crisp apple.
