Description

In this study we investigate how various combinations of transition metals and chelators influence the oxidation rate of beer. Since oxidative staling is a primary concern in brewing science, we aim to identify methods to slow this process and extend freshness. We will specifically assess the interaction between manganese and the chelator salicylic acid.
